I'm not certain if it's possible for someone to weigh over five hundred pounds without being obese. While people who are extremely well-built will often be fairly heavy, as muscle is heavier than most other body tissue, including fat, I'm not sure if its possible to reach five hundred pounds through muscle mass, otherwise you'd probably look like a Space Marine. Alternatively, if you mean he's obese but still athletic and agile, then I'm afraid that's just not possible.
At his height it would be very easy (relative). Bodybuilders such as Ulisses Jr (5'10 215-220 lbs) have the same muscle to height ratio as Elijah (7'8 ~500 lbs). However, Elijah would have a larger frame and thicker, denser bones as a result of genetics and augmentation, and thus you can add twenty pounds or so extra. It is actually very easy to be obese and still very athletic and agile. In fact basically any body builder who has a lot of muscle is "obese" as BMI is a measure of weight versus height. Basically any muscley guy you see on TV whether it be Stallone or Schwarzenegger is classified as obese. (Also one of the noted bits about Spartan augmentation is that they don't really add muscle volume, they just make their muscles way denser, if I recall correctly.
That said, I'm not entirely sure a Spartan would reach that weight. I'm sure it would be possible, but remember that athletes who reach that sort of weight-to-height ratio are primarily purely bodybuilders, not all-around athletes like Spartans would be.
